Established in May 1998, Haeundae Gaya Milmyeon is a famous restaurant specializing in milmyeon (wheat noodles), a local Busan dish that has been loved for over 20 years. Its flavor comes from a broth that is simmered for 48 hours with beef brisket, beef shank, chicken feet, whole ginger, whole onions, whole garlic, and various medicinal herbs, then aged for over a year. The refreshing and clean taste of the milmyeon is superb, featuring chewy noodles made with wheat starch, topped with a seasoned sauce, pickled radish, cucumber, a boiled egg, and meat garnish, all in a bowl of ice cold broth. The restaurant sells only three menu items: Milmyeon, spicy Bibimyeon, and dumplings with chewy wrappers.
